Sweet Pongal

Ingredients
Raw rice – 1 cup
Moong dal – 1/3 cup
Jiggery – ½ cup
Coconut – ½ cup
Ghee – 4 tbsp.
Raisins & cashews- 1tbsp
Elachi powder – 1tsp
Milk – 1/2 cup
Salt

Method

  • In a pressure cooker, add Moong Dal roast it till they fragrant.
  • Add the rice on the same cooker & wash them.
  • Pour 5 cups of water, cook till soft  in the pressure cooker for 3 whistles. When the pressure down remove the lid, and smash the rice.
  • Then add melted Jaggery, on the low flame stir & melt it. Keep it aside.
  • Add Elachi powder, salt, Milk in a smashed rice.
  • If it starts getting dry add Ghee and keep mixing till you get the Pongal consistency. Finally add the Ghee, fried Cashews, Raisins and switch off.

Serve hot ……… Delicious sweet Pongal.
